Healthy Cacao Pops
This recipe is my healthy (and just as delicious!) take on the classic breakfast cereal, cocoa pops. Its 100% guilt free, so easy to make, only has 4 ingredients and its actually good for you!
Equipment
- 1 Large mixing bowl
- 2 Oven tray
- 1 Small saucepan
Ingredients
- 4 cups Puffed Millet* (puffed rice works too)
- 2 tbsp Cacao powder (cocoa can be used instead if desired)
- 1/2 cup Coconut oil (extra virgin is best)
- 1/2 cup Honey (or maple syrup if desired)
- 1/8 tsp Salt (sea salt is best)
Instructions
- Turn oven onto 140 degrees (fan forced).
- Place the saucepan onto low heat and add in the coconut oil and honey.
- Meanwhile place the puffed millet and salt into a large mixing bowl and mix well.
- Whisk the coconut oil and honey until melted down and emulsified together, then remove from the heat.
- Add the cacao powder to the coconut oil/honey and whisk gently until mixed well.
- Pour mixture into the bowl with the millet and gently stir together.
- Once combined well, line both oven trays with baking paper and place the mixture evenly onto each tray. I then use the back of a spatula to flatten the millet mixture down evenly. This will help compact it and create a crispy/crunchy result.
- Place both trays in oven and cook for 15 minutes.
- Once cooked, remove from oven and place on bench to cool for 15 minutes. This is where the magic happens as it cools and hardens so don't skip this step.
- Once cooled, firm and crispy, store in either cupboard or fridge in a sealed container up to one week.Bon Apetite!
Notes
- I get puffed millet from my local health food store or from here. Puffed rice works well too, just make sure there's no added ingredients (like sugar) added to the puffed rice.
- My kids love this one as a breakfast cereal and they add milk and banana. I love adding a handful to yoghurt as a snack or sprinkled over the top of ice-cream (my healthy banana Nice-Cream of course!)
