Easy Pesto Recipe
If you're after a dairy free pesto that's flavourful & delicious, look no further. Introducing my favourite quick & easy, go-to zesty pesto. You can also make this nut free (for kindy/school) by subbing out nuts for sunflower seeds. I love to add this gorgeous green goodness to sandwiches, as a dip with chopped vegies, in my salads and even lathered on freshly cooked vegies as a salsa verde.
Equipment
- Food Processor or mortar and pestle
Ingredients
- 2 Large Bunches of Fresh Basil (italian parsley works well too)
- 1 Clove Garlic
- 1/4 Cup Nuts of Choice (or sunflower seeds for nut free option)
- 1 Tbsp Salt
- 1 Zest Lemon
- 1 Juice of Lemon
- 1/4 Cup Extra Virgin Olive Oil
- 1/4 Cup Nutritional Yeast Flakes (you can use parmesan or pecorino cheese if you prefer the dairy version)
Instructions
- Place all ingredients into food processor (or mortar & pestle) and mix well. Feel free to adjust ingredient amounts according to your taste preferences. Place in sealed jar. Will last in the fridge for up to one week.Bon Appetite 💋
